WHere is a home-style take on a drink from the seasonal menu. This is a party-sized premix which is loaded with the flavours of a holiday season, which makes it excellent for a celebration. Any leftover cordial for brunch beverages, desserts, or to mix another batch of this cocktail.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Citrus Syrup: Place the listed items in a pot, heat until it reaches a gentle boil, stirring so the sugar melts. After that, take off the heat and let it to cool entirely. Transfer to a sealable bottle, cap it keeping it chilled, it will last for about a month.
To make Batch Mix: Combine all the liquid ingredients in a sizeable container, allow it to infuse for one hour, then strain , ideally through cheesecloth, to ensure it's perfectly clear.
For serving: Measure 85ml from the batch mix into your mixing glass filled with ice, gently stirring carefully for one minute until cold. Strain to a chilled martini glass or equivalent, garnish with the cranberries and complete it by giving it a brief mist of mandarin oil over the drink.
